We are seeking a talented, experienced, and passionate leader with a focus on hospitality and F&B. As the Executive Sous Chef, you will be responsible for the overall Back of House function while promoting Rise Hospitality brand – BrewDog, an exciting venue to be opened soon. You will work manage and lead the Back of House department and team within the BrewDog Bluewaters Island. The overall purpose of the role is to make sure that the kitchen and its crew are fully prepared to deliver amazing service to all of our customers throughout service. You will be able to do this through a well-organized and structured kitchen, that runs safely and securely, ensuring that hygiene is a top priority.

Key Responsibilities:

• Ensure that the kitchen team is the right size, receives a high level of training to allow them to complete their duties
• Complete annual crew reviews with your kitchen crew to provide an opportunity to give and receive feedback to all members of your team on a regular basis
• Monitor staff schedules for the assigned outlets
• Together with the General Manager, ensure that all kitchen areas are in compliance with local health and safety measures and certifications are in place.
• Maintain sanitation and safety standards in the kitchen area
• Follow HACCP guidelines and ensure that staff comply with HACCP guidelines
• Ensure purchasing, receiving and all storage are efficiently handled
• Complete stock ordering to ensure that the correct par levels are achieved for dry stock
• Always make sure that food storage and preparation areas as organized and neat to reduce the risk of contamination
• Liaise with the FOH team to be aware of all bookings and events within the site, ensuring that any food orders are delivered as expected

Qualifications:

• In-depth culinary knowledge
• Completed an internationally recognized apprenticeship, culinary school or certified training program
• Apprenticeship or any other culinary certificate/diploma an advantage
• PIC Certification would be an advantage
